Based in Toronto and powered by equal parts olive oil and ambition, Aleyda brings creativity, practicality, and bold flavor to everything she creates. As a mother of three, she develops recipes that strike the perfect balance between nourishing and indulgent, approachable and elevated — the kind of dishes that become favorites long after the last bite.
Outside the kitchen, she’s often found with a frothy flat white in hand, searching for the city’s best smoothie, perfecting her next recipe, or unapologetically choosing a thick cookie or fudgy brownie over just about anything else. Her love language may very well be a generously dressed salad substantial enough to count as a meal.

The Dish On Healthy was born from Aleyda’s personal health journey. At 24, she was diagnosed with ankylosing spondylitis, an autoimmune condition that inspired her to reevaluate her relationship with food and inflammation. By reducing refined sugars, gluten, and certain forms of dairy, she experienced a significant improvement in her health within just a few months. That transformation sparked a passion for recreating the comforting dishes she loved using more nourishing ingredients and balanced approaches.

Aleyda draws daily inspiration from her family — who also happen to be her most honest taste testers. Her love of cooking was deeply shaped by the women in her life, especially her Nicaraguan mother and Palestinian grandmother, whom she considers the true gold standard in the kitchen. Some of her fondest memories are of applying for a cooking “internship” at her grandmother’s house on weekends, where she quickly learned that great food is about more than ingredients — it’s about generosity, connection, bold flavors, and bringing people together around the table.

Rooted in her Middle Eastern and Latin heritage, Aleyda’s recipes are known for their vibrant flavors, nourishing ingredients, and creative approach to everyday cooking.
