A Toronto-based private chef and mother of three, she brings both creativity and practicality to her cooking, developing recipes that feel comforting, approachable, and deeply flavorful. The Dish On Healthy was born from Aleyda’s personal health journey. At 24, she was diagnosed with ankylosing spondylitis, an autoimmune condition that inspired her to reevaluate her relationship with food and inflammation. By reducing refined sugars, gluten, and certain forms of dairy, she experienced a significant improvement in her health within just a few months. That transformation sparked a passion for recreating the comforting dishes she loved using more nourishing ingredients and balanced approaches.

Her children — Ethan, Grace, and Miles — remain her greatest daily inspiration and, according to Aleyda, her toughest critics. Her love of cooking was shaped by the women in her family, particularly her Nicaraguan mother and Palestinian grandmother, whom she considers the gold standard in the kitchen. She fondly recalls “applying for a cooking internship” at her grandmother’s house on weekends, where she learned the foundations of hospitality, flavor, and cooking from the heart.
