Healthy Caprese Pasta Salad

Alright. Summer is officially here! And that can only mean barbecues, gatherings, potlucks- AKA: all sorts of events involving family, friends and good FOOD. If you’re anything like me, I am always asking- “What could I bring?” and then trying to think of something most people can enjoy and would be easy, hearty and healthy. You know what else I consider? Recipes that can be easily doubled to feed a crowd and go well with whatever food your host has prepared. Check and check! This recipe honestly goes well with pretty much, anything! I’ve yet to meet someone who’s tried it and turned away from it. It’s got the right mix of flavors and spices. It’s not spicy, it’s just flavorful and you can’t stop eating it.

Avocado Strawberry Spinach Salad

Finally feeling the warmer climes and REALLY craving fun + fresh salad ideas that involve minimal to no cooking. This unassuming little salad checks all the boxes; especially in the flavor department. Imagine the sweetness of summer strawberries  drizzled in a light, honey-sweetened balsamic vinaigrette, tossed with fresh spinach, dense and creamy avocado, the crunch of walnuts or slivered almonds, and the addition of crumbly goat feta. Day made.

Quinoa Kale Tabbouleh Salad

The very versatile quinoa pulls a light and fresh Kale Tabbouleh Salad. And it does so splendidly; like a boss! Who needs traditional bulgur wheat when you can use a wonderful gluten-free ancient grain like quinoa that works well anywhere you throw it, pretty much. Not to outshine the addition of fine-chopped lemony massaged kale; which in my humble opinion, elevates this classic salad to “next-level good” status. Classic parsley and mint optional, but I highly recommend that you include these for that characteristic herby goodness.

Chickpea & Tomato Mediterranean Salad

This hearty Chickpea and Tomato Salad is a definite crowd-pleaser; the best part- it comes together in less than 15 minutes. Bonus: it comes with a killer lemon, olive oil & herb vinaigrette that’s easily transferable to your favorite salad. The perfect accompaniment to your summer barbecue or a meal in and of it’s own because it’s packed with a ton of plant-protein. Enjoy!

Mediterranean Wreath Salad

Between the turkey, the trimmings, the cookies & pie it is so easy to forget or overlook a big holiday salad. Almost blatantly easy. Well, what if we assemble a salad, shaped like a giant, festive wreath & pack it with all the yummies? Oh what fun! And yes, I (still) like to play with my food. Never…… Continue reading Mediterranean Wreath Salad

Southwest Sweet Potato Salsa Salad

You know how there’s certain foods you just kinda (totally) ignore? Like, for no particular reason. No grudges; just no interest, either. Well, that was exactly the case with me and sweet potatoes/yams. I knew all too well about this potato variety, but aside from my aunt Rosy’s epic Thanksgiving and Christmas sweet potato, cinnamon…… Continue reading Southwest Sweet Potato Salsa Salad

And I’m back! It was a short, but much-cherished mini vacation with my favorite people. I have decided to do a detailed post on it next week, and share some pictures with you all. Something I seldom do; but am taking into account your feedback of seeing a little bit more of me, my family…… Continue reading Spring is for Salads!
