Finally feeling the warmer climes and REALLY craving fun + fresh salad ideas that involve minimal to no cooking. This unassuming little salad checks all the boxes; especially in the flavor department. Imagine the sweetness of summer strawberries  drizzled in a light, honey-sweetened balsamic vinaigrette, tossed with fresh spinach, dense and creamy avocado, the crunch of walnuts or slivered almonds, and the addition of crumbly goat feta. Day made.

I can’t tell you how good it is…. so you’re going to have to trust me and give this salad an honest try. You can thank me later, for real. 😉 This salad can either be a main or the best side to any and all of your summer soirées. You can have fun subbing some of the ingredients, too. For example.. try slivered almonds or honey roasted pecans instead of walnuts. I did raw walnuts simply because they’re healthier and very nutrient-dense. You can also try this with goat cheese; in lieu of the feta. Just as good and both cheeses add nice, salty creaminess to this melange of flavors.

A lot of you ask me why I consume goat’s milk feta or goat cheese; while notably having given up ALL other types of cheese. Well, it’s honestly a very simple answer; I find it way easier for me to digest and goat’s milk in general does not upset my stomach. Clearer skin, less bloating, and improved digestion are all positive side effects of removing cow dairy from my daily diet.

I got the idea for this salad from my sister-in-law, Denise. She used to make it for every summer family gathering without fail. She did not add avocado and her dressing was quite similar- except it had a poppy seed/balsamic vinaigrette. The strawberries and slivered almonds were there… so was the spinach. I found it so refreshing, and light, and tasty. I also feel it’s a great side dish to bring to a potluck or family gathering. It’s easy, best enjoyed fresh, and (best enjoyed) when drizzled with dressing right before serving. No one enjoys wilted/mushy spinach.

Optional adds-ons: cucumber, shaved brussels, raspberries. 😉

Avocado Strawberry Spinach Salad

  • Servings: 4

Ingredients

  • 1 bag of fresh, organic spinach
  • 1 carton of organic strawberries
  • 2 large Hass avocados, sliced into cubes
  • 1/3 cup of raw walnuts or slivered almonds
  • 1/3 cup of crumbled goat feta or goat cheese
  • 1 tsp of sumac to season

For the Vinaigrette

  • 1/2 cup of good quality balsamic vinegar
  • 1 tbsp of tamari sauce (GF soy-sauce)
  • 1/4 cup raw honey
  • 1/4 cup of extra virgin olive oil
  • sea salt and pepper to taste

Instructions

  1. Whisk all the vinaigrette ingredients together and store in the fridge until you’re ready to serve the salad.
  2. In a serving bowl, assemble all the ingredients together and drizzle with the vinaigrette. This vinaigrette recipe makes plenty, you may store your leftover dressing in the fridge for up to 2-3 days in an airtight container.
