Peanut Butter Cookie Dough Energy Bites!

Spoiler alert: I am 7 months pregnant and popping snacks like nobody’s business. That said; I can still control the quality of said snacks and these little bites of heaven have been a godsend. I hope you guys enjoy these as much as I do! x

During the morning or late afternoon I reallyyy need a quick, sweet snack that will get me through to my next meal. But not just any snack; I mean a power snack that’s made with all good things, that has a long fridge life, and that’s easy to prep and equally satisfying. OK OK- so I may be getting a little picky here…. Just a tiny bit. But all good criteria- can you blame me?

I wanted to try some bliss balls with benefits; and these cookie dough energy bites are just that. They have the goodness of old-fashioned rolled oats, ground flax seed meal, dairy-free dark chocolate chips, creamy (all-natural) peanut butter and a tiny dash of pure maple syrup and coconut or MCT oil for some healthy fat action. I am a huge believer in how healthy fats promote weigh loss by helping us burn bad fats. I’ve seen it happen first hand when I embarked myself on this healthy eating journey.

Oh and one more thing about these bites- they DO taste like raw peanut butter cookie dough. Win-win? 😉

Want to superfood them further? AKA super-superfood them?! Add 1 tbsp of raw hemp hearts and 1 scoop of collagen peptides. Collagen is amazing for your bones, your skin, your hair and your nails! It’s my secret weapon in smoothies, shakes, oatmeal and even no-bake sweet treats. And nope, you can hardly even taste it… These cookie dough energy bites can be as simple as you want, or they can have ALL the superfoods. Taste wise- they’re amazing either way and it’s great little healthy snack to have at hand for when that sweet tooth strikes, if you know what I mean…

Also a win: my munchkins love them and they can easily be made lunchbox-friendly by subbing the all-natural peanut butter or nut butter of your choice for nut-free sunflower butter. And just like that, you have a great finger food that’s allergen free and you can pack in their little lunchboxes.

PSA: once upon a time, your girl used to pop Ferrero Rocher chocolates almost on reflex. Friends, I was unstoppable. 3-4 a day as a snack, no big deal. That nice, roasted hazelnut and fudgy chocolate taste lives on in my memory. Also a recovered (or current) said chocolate ball addict? There IS hope for you. If you use hazelnut butter instead of all-natural PB, they taste eerily similar, albeit less sweet. Do it!

Hope you give these a try, they’re amazing, easy to assemble, and a great 15 min meal prep snack that comes in beyond handy during the week!

Peanut Butter Cookie Dough Energy Bites

  • Servings: 14 balls
  • Print

Ingredients

  • 1 cup of old-fashioned rolled oats (I buy certified gluten-free)
  • 3/4 cup of all-natural peanut butter
  • 1/4 cup ground flax seed meal
  • 1/4 cup of pure maple or agave syrup
  • 1 tablespoon of hemp hearts
  • 1 tablespoon of coconut oil
  • 1 cup of chocolate chips ( I use dark, dairy-free)

Want to superfood them further?

  • 1 tablespoon of MCT powder (medium-chain triglyceride oil) for HEALTHY fats!
  • 1 scoop of collagen powder

Instructions

  1. Throw all the ingredients into a large bowl
  2. Mix well with a spatula and then press together with clean hands and shape into balls; roughly the size of a donut bite or truffle
  3. IF you feel the mixture is a bit dry, add 1 additional tablespoon of peanut butter and/or coconut oil before shaping into balls. The texture should resemble play-doh.

You can roll them around in unsweetened, desiccated coconut too as a topping!

    1. Sorry I am seeing this until now! Definitely do keep in the fridge. I bring a few out 10-15 mins before I eat them. They can stay in the fridge for up to 5-7 days and be perfectly fine. Enjoy!
