Chocolate Mocha Overnight Oats!

I’ll be 8 months pregnant in a little over two weeks. There, I said it. The dawning realization that I’ll soon be relying on ready-made breakfasts waiting for me in the comfort of my fridge. I need to have fresh, healthy food that fuels my body ready to go. Food that only requires me to reach for a clean spoon, find a 10 minute time pocket and eat while a newborn baby naps and my other two munchkins pry really heard to wake said baby up.

It will be late Spring or early Summer and I’ll have a FULL house comprised of three little munchkins. A ratio of 3:1 that sure scares me and excites me beyond my wildest dreams, all at the same time.

Time to get myself organized with quick little recipes that will energize me, are made with all good things, and have bonus adds… if you know what I mean! 😉 I’ve been using Silver Fern products for almost two years. I first started on their probiotics and then moved on to their digestive enzymes… and I’ve been most recently addicted to their plant-based organic protein powder! It honestly goes into all of my smoothies, shakes, and oatmeal! Oh yesss! p.s. No chalky aftertaste. If you’ve tried many of the protein powders on the market, you know exactly what I mean!

Although I started eating healthy almost 5 years ago to this day; I never truly realized the importance of taking a good probiotic on the daily. I especially noticed a difference in terms of overall bloating and clearer skin within 2 weeks of consistently taking their prebiotic & probiotic pills every day. I take two capsules daily, first thing in the morning with a bit of lukewarm water and lemon.

The benefits are also deeper than skin-level perks; I get sick a lot less often and have a very regular digestive system. I also noticed that I crave a lot less sugar; which in turn leads to less inflammation in my gut. This along with the probiotic has kept me in pretty tip top shape.

The digestive enzymes are my saving-grace when it comes to travelling for work or eating outside with clients; I often take them in my purse and will take one before dinner if options are limited or if I am about to consume things like cheese or pasta. This trick works like a charm, and helps me to better digest/breakdown food that’s otherwise heavy or bloat-inducing for me.

And finally, their plant-based protein powder is awesome and I’m a fan of their chocolate flavor. I love adding it to overnight oats for added nutrition because protein 101: it helps you stay fuller longer. Overnight oats were a godsend during my previous post-partum period because:

1) they are super satisfying and fill you up all morning (when nursing a baby the HUNGER is very real!)

These overnight oats are my new FAVE for one simple reason: what’s better than chocolate (in the form of cacao powder) and mocha thanks to 1/2 shot of warm espresso?! Plus I’ll be needing that tiny bit of caffeine! It’s probably one of the best combos, ever. Top them with all-natural peanut butter, a handful of raw walnuts, fresh banana slices and you’re set!

Chocolate Mocha Overnight Oats

  • Servings: 1

Ingredients

  • 3/4 cup gluten-free, old-fashioned rolled oats
  • 1/2 cup of your favorite nut milk. (I used vanilla, unsweetened almond milk)
  • 2-3 tbsp of coconut yogurt or greek yogurt
  • 1 tablespoon of cacao powder (unsweetened)
  • 1/2 shot warm espresso
  • 1 tablespoon of pure maple syrup
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp ceylon cinnamon 
  • 1 scoop Silver Fern plant-based organic protein powder

Toppings

  • 1/2 banana sliced
  • a handful of raw walnuts
  • a handful of chocolate chips ( I use dark, dairy-free ones)

Instructions

  1. In a little mason jar or tup: add the dry oats, the almond milk, the coconut yogurt, the vanilla, cacao powder, espresso, pure maple syrup & the cinnamon. Mix it all up & cover tightly.
  2. Leave the jar or tup in the fridge overnight or for at least 4 hours.
  3. Right before serving, top with fresh banana slices, walnuts & dark chocolate chips. Enjoy every spoonful!

Optional Superfoods to add on:

  • 1 tbsp of lucuma powder (it will give it a nice, caramel-like taste, trust me!)
  • 1 tbsp of chia seeds
  • 1 tbsp of hemp hearts

Notes: for the optional add-ons, add them when prepping and let them soak overnight along with everything else- especially chia seeds.
