Strawberry, Watermelon, Feta & Mint Cucumber Salad

I was lucky to be introduced to a broad spectrum of funky salads and bold flavors early on in life. Yours truly was born into a beautifully multicultural family where food took many delicious forms, and the spice rack practically had its own zip code.

Dad’s side of the family was stacked with prolific home cooks, led by my grandmother — the undisputed queen of feeding a crowd. She believed every birthday, anniversary, milestone, holiday, Tuesday, or “someone got a haircut” occasion deserved a full spread and dessert. I kid you not: we ate birthday cake at least 50+ times a year. Honestly, I’m surprised frosting wasn’t one of the main food groups in our household.

Growing up surrounded by vibrant Mediterranean-inspired dishes, fresh herbs, seasonal produce, and colorful salads shaped the way I cook today. And this Watermelon, Feta, Cucumber and Strawberry Salad is exactly the kind of recipe that brings me back to those flavor-packed family tables.

This healthy summer salad is fresh, juicy, salty, crunchy, sweet, and ridiculously refreshing all at once. Crisp cucumber, ripe strawberries, sweet watermelon, creamy feta cheese, and fragrant mint come together in the ultimate easy entertaining recipe. It’s the kind of fresh fruit salad that disappears within minutes at BBQs, picnics, cookouts, and summer parties.

Aside from my beloved grandmother’s prolific cooking, I also had several aunts who helped shape my love of food and flavor combinations — but one in particular always stands out in my memory.

Although she is no longer with us, my Aunt Rosy left a lasting impression on me. She was sweet as pie, wildly funny, incredibly talented, and absolutely obsessed with watermelon feta salad long before it became trendy on Pinterest menus and restaurant patios.

“It’s sweet and salty!” she’d say enthusiastically. “Just try it!”

Back then, her version of this Mediterranean-inspired salad was beautifully simple. No strawberries. No cucumbers. Just juicy watermelon, creamy feta cheese, and sometimes a sprinkle of sea salt. Honestly? She didn’t even need the salad bowl. Aunt Rosy would happily eat watermelon and feta straight off the cutting board like it was the culinary event of the summer.

And yes — she even ate the watermelon seeds, which completely baffled my eight-year-old self.

I can still picture her sitting at the kitchen table, adding a little sea salt to fresh watermelon, oranges, or grapefruit without a second thought. At the time, I thought it was downright questionable behavior. Turns out, she was onto something genius. That perfect sweet-and-salty flavor combination is what makes fresh summer fruit taste even brighter and more refreshing.

Looking back, she taught me one of the best lessons about food: don’t knock something until you try it. And honestly, this healthy summer salad recipe is proof that unexpected combinations are sometimes the most delicious ones.

The girl who moved to Canada barely knowing how to cook anything on her own now runs a thriving food blog dedicated to wholesome recipes, fresh ingredients, and healthy comfort food.

And then there are the days when it all makes perfect sense — because honestly, the apple didn’t fall far from the tree.

This refreshingly sweet and super hydrating salad will be on your weekly rotation because it’s embarrassingly simply- but everyone who tries it falls in love with it.

Traditionally, it ONLY includes watermelon; but I love the touch of added strawberries and cucumber!

You may also add:

  • Mango chunks/cubes
  • Thinly sliced pickled red onions
  • Raspberries
  • Fresh basil leaves
  • Goat cheese, fresh burrata or mozzarella balls
  • Asparagus is also a great add; especially during the springtime!
  • Organic baby spinach (as a salad base)
  • Fresh, organic arugula!
  • Lemony Massaged Kale

Strawberry Watermelon Feta Salad

  • Servings: 2

Ingredients

  • 2 cups of sliced organic strawberries
  • 2 cups of cubed organic watermelon
  • 2 cups of semi-thick cucumber rounds sliced in half and quartered
  • Handful of fresh, fragrant mint leaves *basil also works nicely!
  • 3/4 cup of crumbled feta, I love sheep’s milk
  • 1 tsp of sumac!

Balsamic Vinaigrette (mix/whisk well)

  • juice of 1 lemon
  • 1/3 cup of balsamic vinegar
  • sea salt and coarse black pepper to taste
  • 2-3 Tbsp of extra virgin olive or avocado oil!

OR, try this Homemade Lemon Poppyseed Dressing (mix/whisk well)

  • 3 Tbsp honey
  • 3 Tbsp white vinegar or apple cider vinegar
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • 3 Tbsp real, full-fat mayo
  • 1 Tbsp poppy seeds
  • 1/2 cup full-fat Greek yogurt

Instructions 

Place all of the ingredients into a large serving bowl and gently toss until everything is evenly coated in the vinaigrette or healthy salad dressing of your choice. Right before serving, finish the salad with an extra sprinkle of fresh mint and a generous drizzle of good-quality olive oil — trust me, this step makes all the difference.

This refreshing watermelon feta salad is best served cold and enjoyed immediately while the fruit is crisp, juicy, and vibrant. If you’re prepping this healthy summer salad recipe ahead of time, wait to add the dressing until just before serving. Otherwise, the watermelon and strawberries release too much liquid, leaving you with a soggy situation nobody asked for.
